Mexican Makeovers

Who doesn't have a weakness for Mexican food? If you've spent any time in Mexico, chances are you found some wonderfully fresh, healthy options, full of fruits and vegetables, whole grains, and proteins. But at most Mexican restaurants north of the border, you're more likely to find giant portions of deep-fried fare smothered in a mound of cheese and sour cream.

You're much better off preparing Mexican food at home, where you can control the preparation method and steer clear of added calories. Biggest Loser Club nutrition expert Greg Hottinger, RD, says, “I love making burritos by loading up a whole wheat tortilla with veggies, grilled chicken or black beans, and a spoonful of guacamole. I skip the cheese and top it off with salsa. Yum! It satisfies my taste for Mexican food, and I'm eating a healthy meal.”

When Season 10’s Jessica Delfs returned home to Tucson, Arizona, after her time on The Biggest Loser Ranch, she struggled to avoid the taco trucks that she says are “everywhere.” She dealt with her cravings by creating healthier versions of the dishes she loves—and she shared her creations with us.

“Some great recipes I adapted come from pollo asado street tacos and pollo asado carmelos, which is basically two corn tortillas with grilled chicken and cheese melted in the middle,” Jessica said. “All of these recipes are super simple and basically use the same ingredients you'll find in the tacos from those street trucks, with a fraction of the calories.”
